Blueberry Cinnamon Bun Muffins 🌻: Recipe adapted from @ohsheglows 🌿⭐️
-2 ripe bananas -¾ cup almond milk -1 tsp Apple Cider Vinegar -¼ cup pure maple syrup -1 tsp vanilla extract -¼ cup coconut oil -2 cups whole wheat flour -4 tbsp coconut sugar -2 tsp baking powder -cinnamon -dash of sea salt -1 ¼ cup blueberries
💫preheat oven to 350 and grease a muffin tray with coconut oil or line with paper holders. mix everything together and fill the cups almost to the top. I topped them with walnut pieces, fresh blueberries, and more cinnamon before I put them in the oven. bake for ~25 minutes and enjoy!💫

Quick/simple vegan lunch idea 😌🌿 - base of spinach: layer with @traderjoeslist microwaveable organic brown rice pack (life saver), fresh chopped veggies (I used tomatoes, cucumbers, and carrots), roasted chickpeas (bake for 30 minutes at 350 degrees), hummus + spices/herbs of your choice (I used sea salt and cilantro). Done 🙏🏼✨

-base: frozen bananas, splash of almond milk + vanilla extract for the base -chop up frozen bananas and put them in a food processor with almond milk/vanilla extract
-blend, pulsing the blended from time to time, to avoid chunks -when the mixture is creamy, transfer to a bowl
-top with @ugobars chunks, sliced banana, medijool dates, @theskinnypop popcorn, and @crazyrichardspb crunchy natural peanut butter 🙊…
